Rainbow Cake Recipe: The Rainbow Cake
All white on the outside, and a parade of colors when cut, yes you've recognized it, it's the famous... Rainbow Cake!
Literally, the "rainbow cake", which is all the rage for birthdays, children and adults alike will be delighted and amazed by this colorful assortment.
The recipe consists of 3 main preparations: The cake, which will be colored to form our rainbow, a mascarpone whipped cream for the filling and the covering.
Cake Preparation:
Here, we can make any cake we want, a sponge cake, a molly cake, but we suggest starting with a simple cake recipe because as the preparation is handled a lot during coloring, it's likely to see the sponge cake collapse, which would be a shame!
1) Mix in a bowl, 200 g of soft butter with 200 g of fine sugar to obtain a creamy butter. Incorporate 6 eggs, one at a time.
Add 450 g of sifted flour mixed with a packet of baking powder.
Finish with 25 cL of milk, and a teaspoon of vanilla powder.
2) Weigh the preparation and divide it into 6 equal parts to be placed in 6 different bowls.
3) Color each of these parts with the colors of the rainbow (purple, blue, green, yellow, orange, red) preferably with powder coloring.
4) Bake each batter in a mold of about 16 cm for about 10 minutes at 180 degrees.
5) After unmolding, let cool on a rack. Feel free to trim the baked cakes with a knife if they are a bit domed. They should be as smooth as possible for assembly.
Cream Preparation:
1) In a bowl, place 250 g of mascarpone and 500 g of liquid cream with 33% fat content.
2) Whip with an electric whisk to thicken the cream.
3) When it begins to thicken, gradually add 100 g of icing sugar. Then whip until a firm whipped cream is obtained.
Assembling the Rainbow Cake:
1) Place the first cake circle, the purple one, on your presentation plate.
2) Cover with whipped cream and smooth it with a spatula.
3) Repeat the operation with the blue disc, then green, then yellow, orange, and finally red.
4) Spread mascarpone whipped cream between each layer, smoothing well.
5) Finish by covering the entire cake with whipped cream.
6) Smooth the top and sides of the cake with an angled spatula.
7) Decorate the top of the cake to your taste.
You can use another ganache (white chocolate for example) or cream to fill and cover the cake but for the best effect, it is preferable that the filling and covering are as white as possible to contrast with the rainbow inside!
