What is a Layer Cake?
For many years now, we've seen the emergence of many new terms in French pastry, and one of them has certainly caught your attention: it's the Layer Cake!
But what is the Layer Cake? Where does it come from? And above all, what is the source of its success that makes it so popular? We reveal everything about this very trendy treat!
Origin and Meaning
The term "layer cake" literally means "cake with layers" because a layer cake is a cake where several layers of cake and cream are stacked.
This technique comes from England, and needless to say, there are as many possible layer cakes as there are pastry chefs! This pastry can be endlessly varied, offering many options.
It is particularly used in cake design for the stability it provides.
Making the Layer Cake
We won't provide a single precise recipe here, but the general method for constructing a layer cake, which you can adapt to your tastes, depending on the occasion or season!
As mentioned earlier, the layer cake combines two preparations: a cake and a cream (or ganache).
For the cake, anything is possible, but for a soft and airy result, we prefer sponge cake, Molly cake, or even sponge cake.
The Molly Cake is similar to sponge cake but differs by using whipped cream, while the Sponge Cake is characterized by mixing butter and sugar at the start of preparation.
Both are very soft and airy, and unlike sponge cake, which can be drier, they don't necessarily need to be soaked in syrup.
Regarding the cream, again, you can let your imagination run wild as there are countless possibilities!
From the simplest, by simply adding jam or spread, to more complex preparations of meringue buttercream, you'll most often find ganaches, whipped or not, with chocolate.
For a chocolate ganache of your choice, the key is to melt your chocolate with a rich cream in the right proportions.
You can, after cooling, whip this ganache for a lighter and airier result.
Of course, it's also possible to add treats like fruits, chocolates, or biscuit pieces during assembly to add a crunchy touch to your layer cake!
The Covering
In any case, the Layer Cake can be covered or not, depending on your preference. The Nude cake is a layer cake left "naked" without covering, but it can of course be covered with buttercream, fondant, or even a simple mascarpone whipped cream!
