The Basics of Vegan Pastry
Whether for animal protection, health considerations, or other personal reasons, the "vegan" diet is increasingly popular, even necessary for some people.
Although restrictive in some ways, this diet does not prevent you from enjoying yourself, and pastry is no exception!
We have summarized for you some tips, the basics of Vegan pastry!
As a reminder, in a vegan diet, animal milk, creams or other cheeses, butter, and eggs, for example, cannot be used. What ingredients can replace them?
1) Avocado
Already mentioned in one of our previous articles, avocado, rich in lipids, is the ideal plant-based ingredient to substitute butter or even liquid cream in some desserts.
Moreover, it is rich in vitamins and almost available all year round, you just need to blend it to incorporate it into your preparations.
2) Banana
A surprising alternative to eggs, banana has a strong binding power that will allow you to bind your tart creams, or even your cake batters without any problem!
Sweet, it can even allow you to skip adding sugar, but be sure to match the flavors well as banana has a pronounced taste.
3) Coconut Oil
This oil, 100% plant-based, is a must-have. Highly sought after in beauty, it is also very useful in cooking.
Solid below 25 degrees, it becomes liquid above. As a butter substitute, it will be ideal thanks to its neutral taste. Its colorless aspect also allows you to use it for your cheesecakes or butter creams without any issue.
4) Aquafaba
What is it?!
Well, it's nothing other than chickpea water. So after using your chickpeas to prepare a delicious homemade hummus, don't throw away the water!
Once whipped, it will offer you fabulous meringues, whiter than White! Use it for your chocolate mousses or other tiramisus, or your meringues, you'll be amazed by the result!
5) Chia
Known for their slimming properties, chia seeds are full of surprises. In pastry, they can replace... eggs! Yes, indeed.
Simply soak about 5g of chia (ground) in 50ml of water to obtain the equivalent of one egg.
Then just add them to your cake preparations, for example, for a perfect result.
6) Cashew Nuts
Also very rich in lipids, cashew nuts can replace fats.
Prefer cashew nuts without added salt, of course, and blend them after soaking in water for several hours. The texture obtained will be perfectly suited for making a cheesecake, for example, as a substitute for cheese or cream.
